This is the boxed Collector’s Edition of the Defiance Single Malt Whisky. The whisky is the same, however we packaged these in specially engraved hinged boxes with the information about the whisky on parchment that is signed and wax stamped by the distiller. We have numbered them, and wax sealed and stamped the cork. We did this for only 10 bottles out of the batch for those that want something even more special
In 1795, Captain Bligh was instrumental in planning a sensible solution to quell a mutiny on board the HMS Defiance while commanding HMS Calcutta. Against all odds he was able to bring a mutinous ship back to duty without bloodshed.
In our own minor act of ‘rebellion’, we’ve used Scottish peated malt rather than Tasmanian barley to create this whisky. It has also been matured entirely in a 100L second-fill sherry cask. What was left of the incumbent sherry has not disturbed the wonderfully delicate spirit, which allows the peat smoke to billow through.
Inspired by the great whiskies of Islay, we hope to pay homage to them with our own style of peated whisky.

Every finished whisky is started and completed by hand, using tried and true methods. We feel the results of our work are well worth the enormous effort, and we hope you agree.
